"Smack Yourself Vegan Potato Salad"

Prep time: 15 minutes

2 or more servings:

With peelings remaining Wash, and dice 2 organic Russet Potatoes, boil, drain & cool for five minutes

Place potatoes in bowl and add:

28ml (2 tbsps) Vegenaise Mayo

14ml (1 tbsp) organic yellow mustard

14ml organic sweet relish

Stir well

sprinkle paprika

and Enjoy Slowly!!!

High FIBER is THE KEY!! Avocados!

High in Monounsaturated (good for the heart) fats better than polyunsaturated fats. High in “F word” (fiber), high in Potassium!! Stir Fry

Avocado Stir Fry 10 mins prep

Sauté chopped onions, garlic for  3mins

Sauté chopped not over riped avocado

Season with sea salt, ground red peppers

Little Tabasco
